Before you check out the varieties available in this cheeseball recipe, it is better that you stick to the original ‘no-bake’ format that Paula had popularised years ago –

What do you need?

. Softened cream cheese – 1 package of 8 ounces

. Cheddar cheese (shredded) – 2.5 cups

. Blue cheese (crumbled) – 1/4 cups

. Not-fat milk – 1/2 cup

. Cooked and crumbled bacon slices – take 10 slices and grind it well with salt and pepper

. Poppy seed – 1 tablespoon

. Pecans (chopped) – 1 cup

. The white parts of the green onion – 1/4 cup

. Drained pimientos – 2 ounces

. Fresh parsley (chopped) – 1/4 cup

How to make it?

. You will have to blend the milk and cream cheese in a manner that it becomes creamy and frothy. You may use an electric mixer to beat this combo.

. Into that mixture, you will have to add – pimento, onions, and shredded cheese. After that, take half of – the chopped pecans and crumbled bacon and mix that into this already prepared batter.

. Keep beating this mixture and season it with black pepper and salt.

. Create a ball-like structure out of this blend and transfer it into a plastic wrap. Then put it to chill for 2 hours. If required, to thicken the mesh, you can go ahead and chill it for upto 4 hours.

. Take a pie plate and combine the rest of the bacon and pecans (remember, you have only used half of it to create the cheeseball?) Add the poppy seeds and parsley to this combo.

. Bring out the cheeseball and roll it into the nut mixture. If that is not good enough, you can coat it with the mixture.

. Again wrap it in plastic wrap and then freeze it for 24 hours. Your cheeseball is ready to be served!

What do you need?

. Softened cream cheese (2 packages of 4 ounces each)

. Softened butter (4 tablespoons)

. Softened whipped cream cheese (2 packages of 4 ounces each)

. Shredded Mexican cheese (2 cups)

. Fat-free milk – 1 tablespoon

. Tortilla chips – 2 large (similar in both size and shape)

. Pepperoncini pepper – 1

. Green olives (pimiento-stuffed) – 2 and (pitted type) – 6

. Red bell pepper – 1 (cut into 2 strips and 6 small triangular shapes)

. Small carrot sticks – 10

. Shredded red cabbage – 1/2 cup

. For the goblin look, you will need – green-colored food – coloring, 1 cup each of assorted crackers and vegetables, and toothpicks.

How to make it?

. Giving a twist to the old Paula Deen cheeseball recipe, in this case, you will have to begin by – combining the milk, only the cream cheese, and butter. You will have to keep blending it until the combo becomes smooth and frothy. To this, you will now have to add the shredded Mexican cheese and continue with the blending. After the cheese has blended well, you have to wrap the bowl in plastic and put it to freeze for 24 hours.

. Once you take it out, transfer the mixture onto waxed paper and form a cheeseball-like head. It is now time to set the platter. Take the waxed paper and cut 3 strips (diagonal in shape) out of them around the edges of the platter with some space in between. Place the cheese ball at the center.

. You have kept the whipped cream cheese aside. Now spread it all over the cheese ball.

. Take a bowl and mix the green food coloring with water (a few drops of the coloring with 1 tablespoon of water). When the color is ready, you will have to paint the tortilla chips with this color and set it aside to dry. That’s your ‘cheeseball ear!’

. Once the chips are dry, you will have to press them to the cheeseball forming an ear-like structure. Next, you will have to create a nose, and for that the pepperoncini pepper will help you. Skewer it with a toothpick and attach it to the center of the head of the ball. For the eyes, you will have to press the pimiento-style olives onto the head.

. Remember the thin strips that you made out of the red bell pepper? For the eyebrows, you will have to put them in a V-form structure. Do the pitted green olives have holes in them? You will have to stuff those with the red bell pepper triangles. As far as the toes are concerned – how about pressing the olives to the bottom of the head?

For garnishing

Lastly, you will have to take 2 carrot sticks and stick them onto the head of the goblin-like a teeth-structure. Your cheeseball goblin is ready! Now hold it straight with a spatula and pull out the waxed paper slightly. Then take the red cabbage shreds and press it on top of the cheeseball. Serve it – with assorted veggies and crackers! There’s not a chance your kids will turn a blank face to you.
